Dessert for breakfast; A recipe for Blueberry-Peach Cobbler

Fresh peaches are still in the markets, and until apple pie makes it way into the Fall season, let's enjoy a sweet peach, bubbly and warm. Here's a recipe for Blueberry-Peach Cobbler. The oats and low sugar make it ideal for dessert or a warm breakfast at home.

To cut sugar and still have a satisfying, sweet cobbler, use this trick I learned in food science classes for my nutritional science degrees. Add any sugar only to the topping, so that the taste of sweetness will hit your tongue first. With fruit fillings, especially fruits like peaches, bananas, or baking apples, you won't miss the sugar. I promise!

If you hang out often at Farmers Markets, as I do, ask the local farmers a lot of questions. They know their produce well, and are more than happy to help. This cobbler came about when I was searching the peaches in the bin for soft, ripe ones. The farmer told me you don't need to have a soft peach to eat it. Maybe we're used to supermarket peaches that have been transported long distances and sit for a while, becoming soft. Fresh peaches are hard, yet yield once you eat them.
