Olive and endive salad

Before you say “I've got no time for salad,” here's a 3-ingredient salty-sweet salad. It's part of my no-lettuce salad series. This salad has serious crunch, so even kids will eat it, I'm told. Salads crowded with vegetables will keep you fuller for longer too.

Olive and Endive Salad

Ingredients

1 fennel bulb, trimmed. 

Handful of green, pitted olives. 

2 fresh oranges. 

Directions

  1. Chop all ingredients. 

  2. Squeeze the juice from the orange peels and any leftover orange into the salad.

  3. Use the fennel fronds as garnish. They are perfectly edible.
